Campfire Potatoes

Great Outdoors Potatoes

  • 6 Potatoes
  • 1/2 tsp pepper,Fresh Ground
  • 1/4 cup Olive oil
  • 1 tsp onion,Minced
  • 2 tsp Lemon juice
  • 1 Pureed garlic clove
  • 1 tsp Dijon mustard
  • 1 tsp Paprika
  • 1/2 tsp Corriander
Scrub potatoes and cut into quarters, keeping skins on. Boil until
tender, and coat them with the dressing which you can prepare in
advance. Wrap the potato quarters in tin foil, and place on coal to
brown. Delicious with meat or fish.

You could always substitute the various herbs and spices to suit your own tastes, but this makes an interesting variation on the standard (though very yummy) foil wrapped baked potatoes).
